If you have never tried a Welsh Rarebit, you could be forgiven for thinking it’s just a fancy title for boring old cheese on toast, but nothing could be further from the truth!
It’s one of the all time favorite comfort foods of hubby and I, with its delicious mustard flavors and hint of beer or stout, you might think its only suitable as a winter treat or snack, but it is also delicious on balmy summer evening barbecues!
Best of all its super easy and quick to make!
Don’t let its simplicity fool you, this treat on toast is delicious has a surprisingly complex taste.
As for the beer you can choose your favorite, larger, ale, pilsner or stout, we prefer a nice IPA or Guinness.
The cheesy topping is what makes a Welsh Rarebit the treat it is and is made from Grated Cheddar cheese, beer, Worcestershire sauce, mustard, pinch of salt and pepper along with butter.
Ingredients –
- 250 grams Cheddar Cheese
- 2 tbsp Plain Flour
- 4 tbsp Beer
- 1 tsp Worcestershire Sauce
- 1/2 tsp Dry Mustard
- 1 Egg-Yolk
- 30 grams Butter
- 8 Slices Bread
- Pinch Salt
- Pinch Pepper
Method –
- Grate the Cheddar cheese and place in a saucepan.
- Next Sift the flour and add to the saucepan along with the beer, Worcestershire sauce, mustard, pinch of salt and pepper and butter.
- Stir over low heat until cheese is melted.
- Add beaten egg-yolk, continue to stir until almost to the boil, but do not boil.
- Remove from heat then Toast bread slices in Toaster.
- Spread cheese mixture evenly over bread.
- Grill until golden brown.
- Serve hot.
