Equipment

  • 1 Fine-mesh Seive
  • 1 Cocktail Shaker
  • 1 Glass
  • 1 Muddler or Back of Spoon

Ingredients
  

  • 2 Cups Ripe Watermelon Cubed
  • 10 -12 Leaves Fresh Mint
  • 1 Lime Wedges
  • 2 tbsp Granulated Sugar (To taste)
  • 2 Oz White Rum
  • 1 Club Soda As Needed
  • 2 Ice Cubes

Instructions
 

Prepare the Watermelon Puree:

  • Place the watermelon cubes in a blender or food processor. Blend until smooth, then strain through a fine-mesh sieve to remove pulp and seeds. Set aside the watermelon juice.

Muddle the Ingredients

  • In a sturdy glass or cocktail shaker, place the mint leaves and lime wedges. Add the granulated sugar. Using a muddler or the back of a spoon, gently muddle the mint and lime together. This helps release the mint's oils and the lime's juice, combining them with the sugar to create a flavorful base.

Combine and Mix:

  • Add the watermelon juice and white rum to the muddled mixture. Fill the glass or shaker with ice cubes. Stir or shake well to combine all the ingredients.

Serve:

  • Fill a serving glass with ice cubes. Pour the watermelon-rum mixture over the ice. Top off with club soda to add a fizzy finish. Garnish with a slice of watermelon and a sprig of mint.
