#Valentine's Day Soup

Did you know “Love Apples” is actually an early European term for the humble tomato? In the past it was considered to be aphrodisiac! making it the perfect choice for your starter meal when sharing with your intended other on Valentine’s Day.

For a large part of the world, including the United States, the date of Valentine’s Day (February the 14th) is a cold time of the year. So what better way to celebrate Valentine’s Day than with a warming, luscious tomato (Love Apple) soup with Garlic, the prefect way to get a cozy evening in front of the fire started.

Love Apple Soup for Valentine’s Day

This Delicious, Warming, Luscious Tomato and Garlic Soup is perfect to get Valentine’s Day started.

Ingredients
  

Soup

  • 650 g Tomato Vine Ripened
  • 4 cloves Garlic
  • 60 ml Olive Oil Extra Virgin
  • 450 ml Vegetable Stock
  • Salt
  • Black Pepper

Garnish

  • 1 slice Crusty Loaf Bread
  • 2 tbsp Olive Oil Extra Virgin
  • 1/2 clove Garlic
  • 1 handful Ghoa Cress

Instructions
 

  • Preheat oven to 200°C or 400°f
  • Put tomatoes and the 4 cloves of Garlic into a roasting dish (single layer)
  • Drizzle 45ml (3 tbsp) of olive oil over the top and allow to roast for around 30 minutes or until tomatoes begin to split open and garlic has softened
  • Heat the remaining olive oil in a saucepan, add onion and gently fry until soft
  • Remove the skins from the garlic and combine with the roasted tomatoes, onions, and all remaining juices from the roasting pan
  • Pour in stock, bring to the boil and simmer with a lid on for 20 minutes
  • Cool, then blend until the soup is very smooth, paying particular attention to the tomato skins, we want then to be well blended.
  • Add salt and pepper to taste.
  • For an extra Valentine’s Day feel add heart shaped croutons, either cut by hand or using a heart shaped cutter.
  • Add olive oil and finely garlic to a fresh frying pan, heat for 1 minute then add and fry croutons until golden brown.
  • Serve Soup in pre-warmed soup bowls, top with a handful of Ghoa Cress and if you wish the heart shaped croutons.
